Peter Costello
Starting off as a KP more than 15 years ago Pete has seen and done it all.
Working his way up through the restaurant and bar ranks in London he went on to become Head Chef, Award Winning Manager and Area Manager, working for some of the UK’s most famous brands; O’Neills, Old Orleans, Café Uno and more recently Ed’s Bar and Grill (of which he is the owner)
Pete is famous for running a tight ship, whether it is kitchens, managers or businesses. He has a keen sense of numbers and is at his best when implementing the systems, controls and experience that are ensuring one thing- that all important bottom line!
Nicole Burgess
Originally from a Public Relations and Marketing background (BA Communications Studies), Nicole already had quite a few years of marketing and retail experience when she stumbled upon the hospitality industry.
Making her mark (as all good Australians do!) behind a bar in the UK it was not long before her easygoing nature saw her poached by the restaurant as well and from there she combined her skill set to work as a Sales & Events Manager for one of the leading hospitality players- The Spirit Group.
Her role here included working with Retail Eyes, a customer service evaluation company who launched an innovative mystery dining program, revolutionising customer service throughout the Spirit Group. This led directly to the role of Account Manager at Retail Eyes where Nicole worked with the likes of O2, Woolworths and Subway to launch and roll out similar customer service programs.
Since moving to Northern Ireland Nicole has taken up the post of Operations Manager with the fast growing McNally Group (in Armagh), working with their businesses Stonebridge Restaurant, The Stage Bar.Bistro, Shackleton Crean Event Management & Stonebridge Catering.
